Our mushroom operation is located in Rushville, IN currently. Our operation was started in early May of 2020. The first batch of mushrooms was harvested and sold later in August. Since then we have continued to grow and be the leading provider of mushrooms in the Rush County area. We specialize in high quality Oyster, Chestnut, Lions Mane and other specialty mushrooms. We offer our customers information and recipes on each variety of mushrooms we sell in hopes to inspire our customers to adventure outside their normal culinary palate.

Shiitake

Shiitake - American Flock Farms

 

 

With a deep buttery bold flavor, shiitakes are one of the most versatile and well known mushrooms to add to any dish. They are one of the most nutrient dense mushrooms available and have a thick meaty texture. Shiitakes are a rich source of iron and selenium and also help to boost the immune system and wile reducing inflammation.

Blue Oyster

 

 

Blue oysters are thick and with a meaty texture and have a subtle flavor. They are reminiscent of the button mushrooms from the store. Delicious when sautéed, roasted, breaded and fried. Extremely easy to use as a add-in, side dish, or a meat substitute. Blue oysters are rich in vitamins B, D, iron, and potassium.

Chestnut

 

 

Chestnut mushrooms add a bold earthy nutty flavor to any dish they are added to! This mushroom is unique because of the subtle crunch it retains when cooked. Chestnuts mushrooms are a good source of vitamins B2, B3 and B5 and contain anti-inflammatory and anti-fungal properties.

This mushroom is tinder and juicy! lion’s mane is one of the most unique looking mushrooms out there but don’t let that deter you. This extremely versatile mushroom has a subtle sea food flavor. Lions mane is said to have many health benefits including but not limited to protection against dementia, relief from anxiety and depression, and boosts the immune system.
